Arancini: A Delightful Italian Rice Ball Recipe

Arancini, also known as Sicilian rice balls, are a delectable Italian dish that combines the flavors of aged provolone, prosciutto, and risotto. These bite-sized treats are perfect for lunch, dinner, or even as a satisfying snack.

Ingredients:

  • 2 cups cooked risotto
  • 1/2 cup grated aged provolone cheese
  • 1/4 cup finely chopped prosciutto
  • 1/4 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • Vegetable oil, for frying

Instructions:

  1. In a large bowl, combine the cooked risotto, provolone cheese, and prosciutto. Mix well until the ingredients are evenly distributed.
  2. Scoop about 2 tablespoons of the risotto mixture and shape it into a ball. Repeat this process until all the risotto mixture is used up.
  3. Place the flour, beaten eggs, and panko breadcrumbs in three separate shallow dishes.
  4. Roll each rice ball in the flour, then dip it into the beaten eggs, and finally coat it with the panko breadcrumbs.
  5. Heat a generous amount of vegetable oil in a large skillet over medium heat.
  6. Once the oil is hot, carefully place the rice balls in the skillet and fry them until they are golden brown on all sides.
  7. Remove the arancini from the skillet and place them on a paper towel-lined plate to drain any excess oil.
  8. Serve the arancini hot with your favorite dipping sauce, such as marinara sauce or pesto.

Tips:

  • For a vegetarian version of arancini, omit the prosciutto and use a vegetable-based risotto.
  • If you don't have any leftover risotto, you can also use freshly cooked rice. Just make sure to let it cool completely before shaping it into balls.
