- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 cup chicken broth
Instructions:
- Preheat oven to 375 degrees F (190 degrees C).
- Rinse the chicken inside and out and pat dry.
- In a large bowl, combine the olive oil, salt, pepper, oregano, thyme, lemon zest, and lemon juice. Rub the mixture all over the chicken, inside and out.
- Place the chicken in a roasting pan and add the garlic, onion, carrots, celery, and chicken broth.
- Cover the roasting pan with foil and roast in the preheated oven for 1 hour and 15 minutes, or until the chicken is cooked through.
- Remove the foil and continue roasting for an additional 15 minutes, or until the skin is golden brown.
- Let the chicken rest for 10 minutes before carving and serving.
Tips:
- To ensure that the chicken is cooked through, insert a meat thermometer into the thickest part of the thigh. The chicken is done when the internal temperature reaches 165 degrees F (74 degrees C).
- If you want a more flavorful chicken, marinate it in the olive oil, salt, pepper, oregano, thyme, lemon zest, and lemon juice mixture for several hours or overnight before roasting.
- You can add other vegetables to the roasting pan, such as potatoes, parsnips, or Brussels sprouts.
- For a crispy skin, baste the chicken with the pan juices every 20 minutes during roasting.
