Ingredients:

  • 1 pound linguine pasta
  • 1 tablespoon olive oil
  • 1 medium zucchini, diced
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced

  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup dry white wine (optional)
  • 1 pound cod fillets, cut into 1-inch pieces
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions:

  1. Bring a large pot of salted water to a boil. Add the linguine and cook according to package directions. Drain the pasta, reserving 1 cup of pasta water.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the zucchini and onion and cook until softened, about 5 minutes. Add the garlic, oregano, and red pepper flakes (if using) and cook for 1 minute more.
  3. Add the white wine (if using) and cook until reduced by half. Add the cod and cook until it is flaky, about 5 minutes.
  4. Add the cooked pasta, the reserved pasta water, and the parsley to the skillet. Toss to combine. Season with salt and pepper to taste.
  5. Serve immediately.

  • If you don’t have white wine, you can use chicken broth or water.
  • Feel free to add other vegetables to the dish, such as cherry tomatoes, spinach, or mushrooms.
