  6. In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute. Gradually whisk in the milk until smooth. Bring to a boil, then reduce heat and simmer for 5 minutes, stirring occasionally. Stir in the nutmeg, salt, and pepper.
  7. Pour the béchamel sauce over the eggplant layers. Sprinkle with Parmesan cheese.
  8. Bake for 30 minutes, or until the sauce is bubbly and the eggplant is tender.
  9. Let stand for 10 minutes before serving.

Tips:

  • If you don’t have eggplant, you can substitute zucchini or potatoes.
